Ingredients
- 3 lbs potatoes – I recommend Yukon golden potatoes, but red potatoes also work.
- 3 TBSP white wine vinegar
- 1 ¼ TSP kosher salt
- 3 celery stalks
- 5 green onions
- ¼ C. red onion
- 2 TBSP chopped fresh dill
- ½ C. sweet pickle relish
- ½ C. mayonnaise
- ½ C. sour cream
- 3 TBSP yellow mustard
- 1 TSP celery seed
Instructions
- Wash and dry all produce.
- Leaving the skins on, add potatoes to a large saucepan of cold water.
- Bring the water to a boil and cook for 10 minutes until the potatoes are soft enough to prick with a fork.
- Drain, rinse under cold water, and allow to cool enough that you can peel them without burning yourself.
- Cut the potatoes into bite-sized pieces and add to a large serving bowl. Season with 2 TBSP white wine vinegar and salt. Set aside.
- While the potatoes marinate, slice the celery in half lengthwise.
- Thinly slice the celery and green onions, separating the whites and greens.
- Mince the red onion.
- Roughly chop the dill.
- In a second large bowl, combine mayo, sour cream, mustard, celery seed, 1 TBSP white wine vinegar, 3/4 tsp salt, and season with black pepper. Stir until thoroughly combined.
- Pour sauce over the potatoes and toss in the celery, green onion, red onion, and sweet pickle relish.
- Stir until thoroughly coated.
- Cover with a lid or plastic wrap and chill in the fridge until ready to serve.
